Recipe for White wedding cake

Ingredients:

WORKTOP: 6 pcs eggs, sugar 120 g, flour 180 g, cream: 900 g whipped cream, gelatin 50 g, 200 g sugar, eggs, 2 pieces, 200 ml milk, cocoa 50 g, 50 g jam, vanilla sugar 2 envelopes, peel 30 g grated lemon syrup: sugar 200 g, 20 g lemon zest, Decoration: whipped cream 800 g.





Preparation time and complexity: 2 hours, Advanced Complexity

White Wedding Cake Preparation:

Dough: Mix the egg yolks with 60g sugar until you get a foamy cream. Beat the egg whites until stiff, add the remaining 60 grams of sugar, mix the two compositions, add flour, mixing gently, pour into a cake covered with parchment paper and bake in oven at medium heat. Cream: boil milk and eggs 200 g sugar and stir until the give in boiling, take the flask from heat, add softened gelatin and stir to advance further until completely homogeneous in composition. Divide batter in three parts, in three ships, plus every third each 300 g of whipped cream and mix.

In first bowl, put 50 g of cocoa, in the second ship place 50 g of jam, and in  the third bowl, put sugar, vanilla and lemon peel race. Mix each composition separately. Leaf is split into three slices and syrup preparation with 200 ml of water and 20 g granulated sugar lemon peel. Fill the cake with this  three creams and leave in refrigerator for 30 min. Then decorate with the whipped cream.

Recipe for Coffee Cream Wedding Cake

Ingredients:

WORKTOP: 10 pcs eggs, sugar, 200 g, 300 g flour, 200 g walnuts, wine, 75 ml Cream: 250g sugar, 150g flour, 100 ml milk, 100 ml Turkish coffee, 210 g butter, 75 g lemon

Preparation time and complexity: 1 hour, Medium Complexity

Preparation cream for coffee wedding cake:

Beat the egg yolks with sugar until it dissolved. Add the ground nuts, flour and wine mixing it well, and in the end we incorporate egg whites. Pour cake batter in two greased with butter and dusted with flour and bake in a moderate heat.

For the cream mix sugar with flour, pour over it 100 ml milk and 100 ml concentrated Turkish coffee, mix well, so the fire pan, stirring until the cream thickens. Remove from heat and let cool. After it cooled, add 210 g of butter, lemon juice and zest from one lemon. Split in two cake tops, four sheets filled with cream, and decorate it mounted as desired.

Recipe for Hazelnut Wedding Cake

Ingredients:

WORKTOP: 10 pcs eggs, peanuts 300 g, breadcrumbs, 50 g flour 25 g, 300 g sugar, 2 sachets vanilla sugar, lemon 100 g, Cream: 100 g hazelnuts, 150 g sugar, black coffee and 150 ml butter 200 g sugar, vanilla, brandy 50 ml, 2 pcs eggs ,Syrup: Sugar 125 g.

Hazelnut Wedding Cake Preparation:

Mix egg yolks with sugar, vanilla, lemon peel and lemon juice race. Add the roasted and ground nuts, breadcrumbs and a tablespoon of flour. At the end we incorporate the egg whites, pour mixture into a greased cake with butter and bake at medium heat. Allow to cool, split in three sheets and fill with cream prepared as follows: mix eggs with sugar, vanilla, black coffe and peanuts roasted and ground, heat the dish in a bain-marie until the mixture is bind. Allow to cool, add the butter and brandy and stir until you get a froamy cream.
